My favorite is both your starting kits. Good shield and Long Arming Sword along with good bow. Oh, and on a spirted or campion charger. I kill more with the sword, but nothing beats dropping the Swad Knight with a aroow in the head.

As a Swadian, I fight with sword and lance, so I tend to use 1-handed and shield a lot (be it my balanced long arming sword or my morningstar). However, I do use lance and shield a lot, but only at the beginning of battles when I charge in with my knights.

During sieges, I am known to swap my lace and sword for a crossbow and bolts, and to sometimes put away my shield to swing my morningstar two-handed (nothing beats caving in some Rhodok heads in with an overhead strike).

Nords are pretty versatile but I prefer my axe (1hander) and shield. Form a shield wall and drum your shield with your weapon while shouting taunts. I got the warspear for those pesky cavalry and throwing axes for archers.

My preferred setup:

Long Arming Sword(preferably balanced)
Steel shield(preferably reinforced)

And the other two slots depend entirely on the situation. If I want to be able to hit enemies from a distance(cause I'm always riding a horse, except in sieges), I'll carry a light crossbow. If I'm going to siege a castle, I'll take out a siege crossbow. If I'm going to be dealing with a strong enemy in the field, I'll grab a lance.
But the shield and sword are always there. I don't usually get any PD or PT, because I tend to play a commander character.

heavy great long axe + masterwork warbow + 2x bodkin arrows, with 10 pd and ps one hit to kill pretty everything. Depends on mood and cuircumstances I shot or cut my foes. I don't allow myself to wear anything heavier than banded armor because I'd feel like a cheater.

The bow. I then use two slots for arrows and if I happen to get up close and personal a two-handed war cleaver is always fun to split some skulls. It's relatively fast for a weapon with 120 reach, not to mention it looks awesome.
