Recruit
I recruited 20 riflemen (european) and trained them to about veteran. Got some cash and got them pistols. then i realized they didnt have there Rifles! I went back to the captain and it didnt allow me to switch back to rifles. This dosent seem like a glitch but it would be nice if you can switch back. Now my troops are near usless.

Ever tryed holding a wagon for with only pistols? Not fun. there bad range but fast reload. sometimes the enemy gets shot and still stands.

What means he wouldn´t allow it?

Aren´t there usually all firearms listed when you go to the quartermaster (aside from the one you currently have active),
even the cheaper ones?
And isn´t even the most expensive upgrade option for firearms a musket (so that, even if you cannot go back to cheaper weapons, you still can upgrade to more expensive ones)

No. in this case i ask him about firearms and he says "This is all i have" and my character says "Never Mind" never saw a musket. only a old pistol

Edit: they started with some muskets. so idk o.o

Try talking to him with a few thousand saved up, depending on how many troops you have it could take tens of thousands to upgrade their gear and if you don't have the cash the option wont appear i think.

How much money do you have?

All in all it sounds to me like options aren´t listed because you don´t have enough money to buy them
(upgrading markmen might cost > 1k Thaler)
and I know for sure that, in my game, european musketmen had 4 or 5 types of firearms to select from

Yeah, those dialogues are really wonky.

It doesn't show you things you can't afford - so you have no way of knowing what you can save up for.

If you want to cheese it, stuff all your guys in a town and take one guy to him.  he only charges you basecost x number of troops in your unit.
