Yes you can,
You can do it when you're NOT a lord or got a mercenary contract (I am not sure about this one).
So you have to be free in any way, go to a lord and speak to him. You have an option "Lord, I wish to enlist in your army" Or such.
And thats it xD.
I guess your problem is that you're either lord or you're fighting for a faction (Mercenary for them)

On the same subject, how do you get that initial +5?

So yeah, this is how.
Go to town --> Room where lords are(forgot the name) --> Find the priest/abbot and pay him 1000. You'll get 5 denars with all factions with same religion and close enough ( I think, at least works with Ireland).
