I am pretty sure there was plenty of forced labor and there are historical records of forced military service.  I think in this period we're still dealing with the post-roman emancipation, so slave trade is largely nonexistent ... I think.  I might be wrong about that.

The game already has ramun and slave dealers, which are probably not really that big of a stretch.

One of the things I do want to add is to permit the player to force villagers into service at the expense of his political standing.  Obviously these troops won't amount to much, but sometimes that's all you need.

Slave trading was widely spread among Crimea lands - most parts of Crimea lords income were from slave trading. As well as Janissary troops till the end of 17 century were young boys imprisoned during wars 
Most slaves were sold in galleries, girls as concubines, much less to work in the field or service. Since most of the Mediterranean Sea were still in the 17th century rowing fleet, rather than sailing.

If you do introduce slaves in the game, make sure it decreases your honor.

So just like looting villages, this is an additional way for "evil" players to get rich, but through dishonorable ways.

And if you rescue and release slaves, your honor increases.
 
Thats a too modern point of vue, Original. Slavery was common and full part of society at this time.
It could impact your commoner relations, maybe your honor is how the global society see you there and dont have to be concerned.
That said, commoner relation could have more impact in the game...
