This kind of thing has been suggested a lot but since there isn't one on the first page I guess it's okay.

The only problem with unearnt instant kill is the fact that the player would be unable to suffer from 'head being removed' as such.

I prefer not to have decapitation, but I already said that in a well posted and discussed thread. There was no need to make this thread, well, now you know.
Welcome to the forums, Moodles. 
As Kal pointed out, this has been suggested numerous times before. If possible, use the search function and try and see if there have been any threads regarding your idea. If you can't find any (the search function of this site isn't the best) ... check the common suggestions thread that Ingolifs created (and needs to update) ... the link that Kal gave you points to it. It is a sticky thread.

Seriously, must get old saying that all the time; do you have it handy where you can copy and paste it, or maybe have it assigned to a keyboard macro? Might be handy.
Ok, to be sorta on-topic, I think some limited gore might be decent, but I don't really see what decapitation would add to the game (for me, at least).

I do reference people to it ... but I don't link directly to it as it is getting quite outdated. Over two months since an update means about three life-times in forum world.
Still, it is very useful and appreciated. Never misunderstand that, please. It takes a lot of work to make and even more to keep it updated.
As far as my post-count ... I would prefer if it read zero. I hate post counts. They inevitably end up creating spam threads that do nothing but increase people's post counts ...
The worst thing that they do ... is that people tend to listen and believe people with higher post counts than others and it eventually creates a very elitist group. A very bad thing on a forum, in my opinion. A problem that is here on this forum, already. Thats the reason why I so adamantly greet/welcome new members ... that and this forum represents a business.
The reason my post-count has went up so fast is because I am on these forums many hours every single day ... welcoming new members, trying to solve problems, and just generally being available. I rarely post in the spam-count threads and usually when I do ... it is for a reason.

By the way is it just me or do horses tend to be a bit small in game? Height may be ok, although an extra hand or two wouldn't hurt (in my oppinion) but the actual lenght / width makes them look like a little pony :
