When someone beats a party of dark hunters, they will have dark hunters and dark knights as prisoners. Beat that party and you will be able to get dark hunters 
Note, however, that almost no one gets them as prisoners very often, so it's pretty difficult.

.Yeah, before the latest update, I had 3 in my party, and I set them to upgrade into Dark Captains or whatever, and they all died before any of them got the 10+ levels required. I still have that save game but not a single dark knight since then.

I helped a caraven defeat them once, and then turn round and attack the caravens, got a couple of them as a result.

Yeah, the best way is to spot them in battle with someone else and go in with blunt weapons blazing, then turn on those you helped and voila, grateful darkies.
I don't bother with it myself, I get emotionally unstable when I lose a sword sister, let alone something more difficult to get and train up. Heck, I'm even sad when I lose a normal knight, at least now in 0.7.

Do dark knights ever die??? When i had them, they're very easily recognisable in my team (well, apart from fighting other dark knights) and I tend to help them out if they're surrounded, either charge at the crowd or shoot a few around him dead if i'm far away.
