Are companions supposed to randomly start a conversation with you saying that no matter how evil the world is we must keep fighting?

I don't know if I've ever gotten that particular dialogue, but yeah there's a lot of nifty dialogues and writing done for PoP. It might just be that your companion decided to strike up some conversation.

I was just travelling on my merry way when suddenly Sir Roland decided to say something, and it was along those lines of continuing to fight evil. It is very interesting that there are so many dialogues in the game that are random and unexpected, I find it an important part of the game when it comes to building some sort of connection the the whole story.

Random and unexpected. What a nice description of the effect the voices had the first time it was introduced during betatesting. Sweet memories. The various first reactions caused by Ullr Vetr to the betatesters from this unexpected feature ranged from spilled coffee, to almost fouled underwear and near heartstroke.

And - I´m pretty sure of that - half an hour of hearty laugh for Fawzia and Mad Vader for every shameful confession.

The companion dialogues were a progression of this development. It´s random and intended. They´ll start bickering around or lecture you or their likes/dislikes randomly. And I personally pretty much like it that way, just as I kept Boo around all the time in Baldurs Gate to read about Minsc.
It makes the compansies a tad more alive.

And no matter how many problems the massive sound package PoP has creates, it´s totally worth it and absolutely Fawzia´s credit. All those catchy tunes are just awesome.

The only thing it really needs is more cowbell!

And bagpipes.
And Animal at the drums.

Does the companion dialogues count as music, as in if you have the music volume turned down you won't hear the dialogues?

I think so. But usually you get the dialogue screen as well if one of your compansies starts *****ing around, so you can quickly turn up your speakers volume.
Or simply check the soundfiles and listen to the .ogg files manually to decide wether or not you like them to hear.
