i almost took over all the nords except for some small castle`s but the mayor towns and most castle`s are mine (i am a rebel) but 1 of my city (maybe even more) is getting more in the - to me every few days why is that hapening ?? (and how can i fix it instead of buying them a bottle of wine in tavern)

They are rebelling.  You can either give the fief to one of your lords or you can turn off the population center rebellion.

off the population center rebellion.

how can i turn that off (it is a city and not a castle i only give castles to my lords)

When you are on the world map click on "Camp"
Then click on "Change game settings"
Then click on "Do not allow population centers to rebel from the player's kingdom"

Edit: spelling was worse than ever -.-

Edit II: than, then.. love it -.-

dont turn it off
its a weirdy option!!!

It reflects the fact that you need to keep your citizens content. Building schools, festival squares, and such will make them like you more, and helping them will make you like them more. Paying no attention breeds discontent. Discontented citizens may rebel, if they are maltreated for too long.

I wouldn't turn it off myself either. It makes things more challenging/brings in some diversity.
But since he asked how to do it...
