As caravans get larger in size, the portion of their loot that actually has anything to do with trading grows smaller. If you strike at a very small caravan, it's almost all trading stuff, but if you strike at a very large caravan, you're lucky to find a sack of flour and a bundle of furs.

I'm under the assumption this is not intentional. ^^

You have a lot of crap from the defeated foes. That leaves little space for the trade items.Kill almost all, retreat, and kill the last one. That way, you won't have the problem...
 
That solves the problem for now, but it IS a bug, if you manage to take a heavily defended caravan, the reward should be greater, not equal or less. Perhaps increasing the maximum size of the loot inventory screen, leave the player inventory alone, but make room in the loot section to pick up the fallen gear AND the caravan's stuff, it's likely he'll have to leave some of it behind, but he should get the option, I think.
