I often set up a camp during the night to let my party heal. So often, a bunch of looters/bandits/deserters tries to attack it. But it's always the same kind of combat: both sides coming at each other like in any fight.
Instead of this, we could have a map with a camp (tent, fire, sentry, horses sleeping) and enemy trying to sneak into the perimeter. Everybody is on foot and if someone want to mount a horse, he/she has to reach it without getting killed.
