is there any way someone could make a mod that makes it so that more blood appears on you when you hit someone with a sword or something or more blood spurts per hit?

Don't think so, I think the particles are hardcoded.

Although you could play around with the particles.dds texture file, maybe you can make the blood more visible with that.

I don't know which part of the file is the blood particle, if its there at all....
