As long as you are in guard mode (the game's fighting stance) you can still block all attacks in a certain direction even if you aren't locked onto them, but you do have to target constantly between them in order to swing at them individually. You wouldn't want to do that though. More often than not you are better off just killing one opponent as fast as possible instead of trying to slowly damage two of them.
The game has a Revenge Mode that is essentially a comeback mechanic against getting teamed up on. There's this meter-bar that when full (and manually activated) allows you to go into a rage, increasing your defense and your damage output, as well as giving you a little more health for the duration of the rage (which isn't very long.) The meter fills with each attack you successfully block. The bar rarely gets full in a 1v1, but if you are successfully blocking two people at once, the bar can fill up pretty quickly and if you make good enough use of it, you can kill one person very quickly, and essentially turn it back into a 1v1 scenario.
Important to note that this game does seem to be centered around 1v1s, as I believe that was the main intention for the game. That would also explain why they would add a revenge mode that essentially makes it dangerous to team up on someone. The meta in 2v2s right now is that you let people finish their individual duels. If you don't, you are seen as dishonorable.
Since the melee combat system is more complex than warband's, a concentration on 1v1s isn't really bad. You already have more than enough on your plate trying to concentrate on your 1v1 against specific move-sets, as well as feints, parry timing, counter-bashes, counter-strikes, etc.
As Can should well know, you're already ****ting bricks worrying about well timed and well placed bash-throws that will throw you off a hill or into spikes

The time you have to counter a bash is fairly small and if you aren't thinking about it all the time, you'll get caught off guard easily, which may lead to your instant and premature death.
