I liked the earlier post about the implementation of hunting in the form of units of animals roaming the map which can then be "fought" normally, probably using a bow. And naturally, hunters would already be much better at this than other classes off the bat since roaming units on the map are best caught with the tracking and spotting skills.
However, why not add bands of roaming dangerous animals that might attack small groups or need to be hunted down as quests? For example, wolf packs or wild dogs could prove an interesting threat.
And even better, what if one could keep a unit of attack dogs in one's army? You know you want to!
I'm not certain how much historical precedent there is for using war dogs, but certainly the Spanish conquistadors made good use of them, and also in castle defense scenarios (according to videogames, anyway). Wolves and wild dogs seem (to me) to be perfectly in tune with the flavour of Mount and Blade, and a nice way to spice things up without spoiling the precious realism.
