@Flesson19 Thank you so much for doing these videos (data crunches). I have found them invaluable for many versions, although I usually carry out smaller scale investigations of my own.
One thing I have paid some attention to, which I have not seen you mention is the total number of each workshop spawned when generating the world. (Yes they can change but not for some time...) The data I have from my last few campaigns, all after 1.8 or so, or whenever the economy change for spawning workshops occured:

The number after the slash is the number of double workshops for that type, more for my own curiosity than anything.
It has been significant for me that the worlds where there have been single digit Silversmiths (my first go to throughout the period) have had them be much more profitable than the worlds with double digit numbers, regardless of the geographical distribution. Makes sense since the ideal consumption for the world (assuming prosperity and so on to be equal) should be the same but with less total workshops the global price should increase - at least where the workshop supplies tradable goods.
