So far I have only taken two kidnapped girl quests, and both times the ransom money disappeared. Each time I stopped to beat down some bandits and when I stopped at the closest town to sell the loot, I noticed that I did not have the ransom money, only the gold I had before taking the quest. I thought maybe the ransom gold did not show up in my inventory, but when I got to the kidnappers, I did not have enough gold to pay them off. I had to run back to Zendar and make the money in tournaments.

The ransom gold doesn't go into inventory, it goes into your gold total. It didn't vanish, you spent it. Thus you can treat it as a loan, but you'll need to have the cash before you can get the girl.
