You might be able to tweak them out with TweakMB: http://forums.taleworlds.com/index.php?topic=101731.0

You probably won't be able to remove guns directly but it might be possible to tweak them to an extent that they never show up in-game. I can't help you though since I don't have much experience with TweakMB.

Same here. Is there an update brewing? Or are Taleworlds' servers just messing up?
