One way is to kick ass like me, and the other is to hold position near at the edge of the map, because when they try to circle you they all get stuck up against an invisible wall therefore making them easy to kill. If they're stuck long enough, they'll get off their horse, but I wouldn't count on it.

No. There will be some goons running around in circles which are basically impossible to find. When I was fighting against the Khergits, I took all of their towns and three in game months later, I see Lord Tonju running in circles close to Suno. I beat him in a battle and what do you know? The Khergit Kanate is no more!
