Obviously your chances of sneaking through will be increased if you do it at night and daytime will usually not go well/be almost impossible.
I wouldn´t consider this as true.
When youre considering that your not climbing the wall, but simply walking through the gate, it should be a bit more sucessful while its daytime, because people who want to pass a gate at night will be controlled with more conciousness than the great amount of people who are trying to enter a city at daytime.
But you´re right. It would be amazing to have a manual sneak system, maybe even with different choices how to enter. Maybe even by really climbing the wall or hide under looted Bannercolours as an different option than being a wandering scholar/monk. Another great option would simply be to buy the guards who are guarding the gate.

Well I would consider it a good improvement to the game, but it shouldnt be THE mayor Part in the gameplay, because religion is a really complex structure which makes the implementation, if its trying to be as complex as in real life, really hard. But a structure like :
-A variety of Faiths/Religions(they should be adepted from those religions we have/had in real life [Poly/Monotheistic/Natural/"God"-based(I dont know how to name the opposite of Natural gods^^)])
-You choose one for yourself which gives you advantages to those who have the same faith. a.e. while persuade them.
-There should be an option to make a war an religious one so there will be like moral benefits for your troops who should normally have the same faith as their liege, but you will have to force the citys/villages/castles to convert to your faith after you conquered them which CAN lead to rebellions.
- So its like nearly everything a twosided sword. You will profit while fighting, but maybe come at clashes with the residents who are at different religious sides.
-Companions should also be in some sort involved in those religious matters. A religious war against the faith of one companion a.e. should anger him(maybe their could be some sort of "freespirits" who dont take that to serious, even if they are connected to the faith-> based on the characterflews of the companion)
-The possiblity to simply accept the religion of everyone or even to fight for the "freespirited"( for those who dont care about religion or want to "destroy" religion)
-Different animations for marriage reffering to the Faith you have.
