Sometimes the selections will randomly change.  For instance, you select your archers on the command screen and tell them to follow you.  You go up the walls and bring up the command screen again to tell them to hold and the selection has changed to only infantry.  It happens to me all the time and I rarely notice it when I give the order.

When Lords runs off it's because they have other tasks to do, e.g. their castle is being sieged.  Campaign gatherings may take awhile, it takes something about a week to get a good 5-6 Lords with you.

Siege enemy castles first.  Start with the closest to your border.  If you can't take castles yourself, start a campaign, wait until a few lords join you and try again.  After you've taken every enemy castle, start on their towns.  And once you've finished those you may have to hunt down the last few lords wandering around the map.  If you can't find them use ctrl-t.  A window should pop up stating the faction was defeated if they don't have any units left.
