how about exactly evading? by pressing the key with the right timing, your character can move his body sideways so you can attack him while his attack animation is not yet finished
and an actual pirouette, when the attacker's weapon is close enough and supporting a pirouette, with the right timing and also pressing the block button and moved it to the right, we can deflect their weapons to the right giving us room.
but of course if it is a heavy two handed maul by doing a pirouette can make your character go out of balance or something
maybe taleworlds can develop these sorts of mechanic. dont know though
