    I believe it is impossible to measure profits in any way of form.
    It totally depends on current world situation and the amount of caravans/peasants successfully trading with a city. In times of peace, where there is no demand for food and high demand for luxury items (like jewelry, steel, furs, wool, etc), a brewery would hardly touch a 200 gold profits, while silversmith is churning 400 a day. In times of all-out wars with constant raiding and sieges, food prices skyrocket and everything else becomes basically worthless. The same brewery would net you good 500 denars while silversmith would bring about 30-50.
    I've tested the same workshops multiple times now for up to 5 years and the difference in profit between games don't seem to exceed about 20%, and they are mostly the same. Some workshops' profits do change in the long term but when they do, it tends to change consistently between different games. Also, the profits workshops bring don't change much for up to 3 years which I'd say is a decent amount of time, so it would be worth it to buy a workshop according to the spreadsheet since it would be guaranteed to get that profit for at least 3 years.

    I've been testing the exact profits workshops bring for a few days now. As of now, I tested every workshop in 5 Vlandian cities.     A few days ago I tested all the workshops in Charas for my own use. I'd like to contribute to the amazing work you've done, here are their incomes:

    Brewery - 70
    Velvet Weavery - 0
    Linen Weavery - 0
    Wine Press - 0
    Pottery - 150
    Olive Press - 45
    Wool Weavery - 130
    Tannery - 200
    Wood Workshop - 25
    Smithy - 30
    Silversmith - 0

    The zeroes did generate like 10 income for a time but in the end they didn't generate any income for a long time. I tested the workshops each starting at about 30 days into the game.

    You can also not upgrade troops until almost all of them are ready to upgrade. This way you won't have the problem of more experienced troops getting more kills and upgrading even faster. You will also pay less wages, but a possible downside is less experienced troops may die.
