Well, maybe in battle no, but it was considered a knightly skill to be proficient in archery. Also, just cuz: Samurai (equivalent in social status to European knights) were expected to use the bow in battle, and like the katana and later the yari, the yumi was the samurai's most prized possession. So... knights of some kind did use bows... just not European ones. I'm not sure about Arabic armies back then, but I'm pretty sure the horseback composite bow was used by semi-noble warriors and elite slave warriors like ghulams.
