One of my favorite's definity has to be the late medieval sallet. My favorite helmet of all time is the sallet of Boabdil (Muhammad XII). It's an utterly beautiful piece of art. I think it looks absolutely heroic

Comrade, I'm sorry to tell you it's not true what you're saying. It is not from Boabdil, but from Philip I of Castile, "the Beautiful One". You can check it here: https://www.patrimonionacional.es/colecciones-reales/colecciones/armeria/celada-de-felipe-i-de-castilla-el-hermoso-0

[...] Because of the orientalizing character of the decoration it was also linked in the nineteenth century without foundation to Boabdil, the last sultan of Muslim Granada.

Andalusian Armor

Part of the confusion is the result of centuries of cultural exchange between Spain and North Africa. Moorish warriors still wore
European helmets and armor up until the 16th century. Arab sources even mention them, specifically favoring Castilian armor
and fashion. Andalusian nobility often wore similar armor, to the Spanish mercenaries and guardsmen they hired...

There is also the Yarm helmet (which might be Anglo-Saxon according to some) found in England, but there are strong suspicions about its authenticity:

I remember how disappointed I was when I learned that it hadn't any link with Boabdil. As a kid this helmet fascinated me, and when I saw it in the Real Armeria of Madrid, I slightly push on the showcase, which made the helmet swing on its mount. I was like 'wow I just moved the helmet of Boabdil!'
Still an amazing helmet.

Good old Tannhäuser and his iconic Teutonic winged helmet (which probably was never worn by the Teutonic Knights themselves, but it looks cool).

Codex_Manesse_Tannh%C3%A4user.jpg
 Most Teutonic knights just wore only the basic armor required. Personal coats of arms were forbidden.
However Grand masters and Confrère Knights may have been an exception. Winged and horned helmets where popular
at the time, mostly in tournaments, thou appearing sometimes on the battlefield, albeit with a simpler, lighter construction...
