is this possible to convert a town/village/castle to your faith ? And if so, how ?

I'm not sure, but I think you can build a shrine to whatever your god is.

That was possible in Brytenwalda mod by building a shrine/church in your town. Maybe this is still works that way in VC. But conversion was a very slow process... several months or so.

It is. Build the right temple and wait for it. You can check with one of your NPCs admin how many people you converted.
