i want companions but i dont know how too get them hlep :s

You can have companions only if you are a lord of a faction.
Just go to your fief and "invite nobles for a hunt" option.
There you can hire all of them.Also if you become king of your own faction
you get another set of companions.Unfortunatelly (For now)
if you are amecenary you can't have companions.

how do i get one of those handy dandy banner carriers ? and how do i get out of my current faction. im with the norwegians but i want too make my own

Banner carriers in battle are for your troops only, one troop will carry your banner.
There is no item in-game like a banner.It's simply a nice addition which gives atmosphere.

To get out of your faction simply talk to your king and tell him
"I'm tired of being your vassal i want to retire", something like that
- i do'nt quite remember the dialogue. But it isn't difficult.
If you are a mercenary you have to wait until the contract is finished.
Then choose "don't renown the contract with faction "X""
and you are free to go.

PS: Probably banner-carriers are for lords only not mercenaries, though not sure

there is an item, it's just called flag though and afaik it's only possible to get by picking it up from the guy who was carrying it, makes a nice trophy too, you can carry it or give it to a companion but it has no attack

You can also revolt by choosing to reject the decision of your king over a fief you have taken from an enemy.

how the hell do i get garrisons too my castle ?

You can't control directly the garrison, you can just choose to have small/medium/huge garrison, and the soldiers will be automatically recruited.

There will be possibility to change it to  manual control in the next revision. But real man would not do so.
