this is how you get animals.
When you enabled cheats,and you are on map press ctrl and ~. Then type in box cheatmenu,after that go to camp and you will see cheat menu.
Enter it and go to first option,from there you can find any item in game including animals. I love this option because i hate going from town to town to find what i need.
This is awsome option because in some mods i couldnt buy or find some items like boots,or crossbows,so this is the way to find them.
Since all animals have 11 riding skill,max is 10 you need to lower that because you can't ride them.
Go to items_kinds1,and find this

Do this to all animals,and you will be able to ride them all.
Chicken animation and moving looks good while riding,cows are moving like spiders,not like cows. I just tried male deer,that thing is a beast. just ride into the people and knock them down all.
Wolf can do that too,but deer looks so badass.
