My suggestion.

Sallet - Would match plate armour that great helm you know that?
New type for horse -  Maybe like "Grand war horse"
Gothic & Milanese armour - Beautiful Armour should be add in this game!
Able to recruit soldier from city.
Knight can be recruit in castle - Isn't it realistic if you can recruit a knight from a castle?
Ale and wine should be drinkable again - I miss good old time buying barrel of ales!

The three in bold sound alright. Though you'd find knights in villages as well. And some in towns, perhaps, even. Heh. Recruiting townsmen to fight is also logical and for a campaign-addition it might indeed be nice to also have to keep your troops with a sufficient supply of drink.
Nords ruled by King Ragnar, Khergits ruled by Sanjar Khan, Rhodoks ruled by King Graveth, Swadians ruled by King Harlaus, Vaegirs ruled by King Yaroglek. All those peoples live, fight, and die in the continent of Calradia. The Nords and Rhodoks field solely infantry and archers, the Swadians and Vaegirs have infantry, archers and cavalry and the Khergit field almost exclusively cavalry. No such things as "infarty" or "calvary" exist. A nice link to my mod ;)

World of Warcraft, Runescape and tons of other games have idiots staggering around and puking from consuming the beer in-game.

No M-Ratings for them, so why Mount and Blade...

I think Knights and their equivelants for non european culture based factions should be found only in the Lord Halls of both Castles and Towns, and they can only be recruited by a vassal of their faction.

Meh. Combining the three things does actually seem to make the game more mature-ish I suppose.
